Although the largest market for kangaroo meat is still Australia, kangaroo meat is gaining ground in the EU and Russia as demand for lean, supplement-free meat increases.  After 10 years of battling animal activists, adverse weather, and global recession, the industry fell to four processing plants from 16.  However, this trend is reversing as demand grows once again.  One kangaroo meat producer, Macro Meats is undergoing a multi-million dollar rebranding and doubling of capacity while also establishing export protocols, grading standards and inspections.
