New Foodservice Study Shows Pork is Fastest-Growing Protein

According to a study done by Technomic, Inc. pork is outpacing the growth rate of all other proteins in the foodservice industry and has been the fastest-growing protein for each of the past two years.  Total pork sold through foodservice reached a record 9.25 billion pounds – a volume increase of 462 million pounds over 2011 at the time of the previous survey.  Fresh pork has driven the growth of the total pork category increasing by 3.5% while processed pork increased by 2.3%.  Of the 24 pork categories, 22 showed a positive growth in sales.  On a per pound basis, bacon showed the largest increase between 2011- 2013 of 102 million pounds.  Across the three traditional meals of the day, pork is almost equally represented, but grew most aggressively in the areas of breakfast protein and snacks.
